Easy Enchilada Surprise

When you enter the land to which I am taking you and when you eat the food of the land, present a portion as an offering to the Lord.

Numbers 15: 19 NIV

What you will need:

1 large chicken breast – baked and shredded (prepared beforehand or substitute with 1 can of chicken from supermarket)

12 or more soft corn tortilla shells

1 small can sliced black olives

1 cup cheddar cheese, shredded

1 can black beans

1 large can enchilada sauce

1 small can enchilada sauce

Mix all ingredients together except the shells and one can enchilada sauce.

Cover bottom of casserole dish with a thin layer of tortilla shells.

Spoon sauce using large can enchilada sauce.

Cover shells with mixture.

Continue to layer with shells, sauce, and other ingredients until dish is full.

Pour small can enchilada sauce over top and sides.

Spread shredded cheese over top.

Bake 325 degrees in casserole dish.

Serve with salad and hard nacho chips
