Easy Cake Mix Cookies

Ingredient List

1 box of chocolate cake mix (any variety)

½ cup vegetable oil

2 eggs

2/3 to ¾ cup powdered sugar

With just four ingredients, these cookies are not only delicious, they are oh-so-easy to make. They are a perfect Welcome Back Summer treat. Kids will have almost as much fun rolling the dough into balls and dipping them in powdered sugar as they will eating them.

Start by preheating your oven to 350 degrees.

Next fill a small bowl with 2/3 to 3/4 cup of powdered sugar, and set it aside.

After that pour the cake mix into a large mixing bowl, then add the oil and eggs. Stir until moistened. The thick, doughy mixture is now ready to be rolled into 1-inch balls.

After forming the ball, drop it in the bowl of powdered sugar turning it until it is completely coated.

Using a spoon, pick up the ball and drop it onto a cookie sheet, keeping each dough ball approximately 2 inches apart. You can substitute your fingers for the spoon, but the powdered sugar tends to come off on fingers.

4 cookies small

Bake 8-9 minutes for a moist cookie. If you like your cookies firm, leave them in the oven for an additional minute. The cookies will flatten out as they cool.

5  cookies small

 

This recipe makes approximately 30 cookies (if you can keep from eating the dough while you are making them).  And like most cookies, they are yummiest fresh out of the oven.
